Zucchini Fries

This recipe has changed my outlook on zuccini. Don't get me wrong, I like zucchini alot, but this way of cooking them takes it to the next level. 

And its pretty easy.


For the recipe you will need zuccini or squash cut into fry shapes. In one container add 2 egg whites and alittle bit of olive oil. In another container add bread crumbs. I used panko crumbs, but you could make your own as well. If you have nutritional yeast add it to the dry mixture to get a slight cheesey flavor. 

Dip your your zucchini strips into the egg mixture and then roll them in the dry mixture trying to coat them evenly. Repeate for all the zuccini. 

Roast in the oven at 350 degrees for about 35 minutes. 

When they came out of the oven they were instantly devoured. It became clear that the recipe was a success, but I didn't make enough. 



Also, for a dipping sauce we made a yogurt based sauce that was yummy. To make the yogurt sauce combine 1/2 cup greek yogurt, lemon, cumin, red pepper, and garlic powder to taste.
